It’s no secret how much I love, love, love me some healthy no bake energy bites.
I just can not get enough.
They are just so delicious
and handy
and easy to make
and eat
and did I mention they’re delicious?
Well just incase you missed it, they are. Seriously delicious!
Todays recipe is a good one people – just 5 ingredients, 5 minutes in your food processor or blender and 5 mins until they all somehow, magically disappear(into your belly 😉 )
Today sweet invisible internet friend of mine, we are making ourselves some healthy, no-bakeStrawberry and Cream Cashew Cookie Bites.
I mean strawberries and cream, come on? Such a classic flavour combination. I have been racking my brain for months now, trying to figure out how to get the perfect, strawberries and cream energy bite recipes to share with you, but I just couldn’t seem to nail it.
Enter Natalie, gorgeous, sweet, wonderful Natalie who blogs over at Perry’s Plate. A few months ago she shared this recipe for her Homemade Strawberry Cream “Larabars” and there it was . . . the answer I had been looking for – Freeze dried strawberries!
The heavens opened, the angels sang, ladies and gentleman we have ourselves a winner!

Buttery cashews are combined with sweet, chewy dates, a splash of vanilla and some freeze dried strawberries to give you these healthy, no-bake, light, sweet, deliciously buttery, creamy strawberry cashew cookie bites.
I love the way the freeze dried strawberries give them a pretty pink glow (← I’m such a girl) and they also give these bites a nice little crunch. A texture lovers dream.
As always our no-bake energy bites are all natural, with no refined flours or sugars added. Sweetened naturally with dates, a splash of vanilla and those crispy, crunchy freeze dried strawberries, nothing more nothing less. These strawberry and cream cashew cookie bites doesn’t actually have any cream in them either, that dreamy, creamy flavour you get is thanks to our buttery cashews♥♥♥
I always have some of these babies stashed away in the fridge in case of emergency, you know, for those times when you stand there, staring into the fridge, not really hungry just bored/lost/procrastinating and you can’t seem to decide what, if anything, you want to eat? So you just grab a handful and stuff them into you’re pretty little face while no one is watching one of these sweet, pretty in pink bites and all is right in the world again.

Perfect with a cup of tea or coffee as your mid morning snack
Perfect as part of your pre/post workout fuel
Perfect for getting you through that pesky ol’ late afternoon 3:30 slump
Or the perfect,guilt freeway to finish your day.
Subtly sweet, strawberry infused, creamy, dreamy, cashew cookie bites that also happen to be totally healthy, all natural and pretty in pink.
What are you waiting for? Time to get your cookie on
Make them, eat them, love them
1 cup raw cashews
6 medjool dates, pits removed – Keto/ low carb lovin’ friends and those of you who have trouble digesting dates –soak/ferment your dates in coconut water keifr or kombucha overnight and you should be ready to roll
1/2 cup freeze dried strawberries
1 teaspoon of vanilla extract
a pinch of salt flakes
1-2 scoops of collagen – for an extra boost of protein and gut healing goodness
1 – Place cashews in your food processor/blender and pulse until crumbly, you want there to still be a few bigger chunks to give the bites some nice texture.
2 – Add dates and pules until the mixture starts to come together to form a sticky “dough”.
3 – Add vanilla extract and salt flakes and pulse again to combined.
4 – Lastly add your freeze dried strawberries and pulse until just combined.
5 – Using your hands, roll approx 1 heaping teaspoon of dough into little bite size balls then transfer toan airtight container (or even just a ziplock bag) and store in the fridge until you are ready to devourindulge.

Hi Tracey,
I think fresh berries would make the mixture to wet. You could try just regular dried strawberries instead of the freeze dried but it will alter the texture slightly.

How do you store the bites and for how long? 40 balls sounds like a lot but it’s great as I’m planning to make a few different raw snacks to keep in the freezer/fridge.

Hi Sam,
I just store them in an airtight container (or ziplock bag) in the fridge – they should keep well for a week or so.
I get approx 40 and I use approx 1 heaping tsp per ball so you can get more or less depending on how big you make them.

I think they should freeze just fine Sam. I haven’t tried with this particular recipe but I have done with others with no problem.

Just made these with raspberries and slivered almonds. They are delicious! Using my fitness pal I calculated a 10 g bite has 46 calories, 3.3g fat, 26mg sodium, 3.4 carbs, 1.2 g fiber, and 1.4 g protein with my changes.

I just found them in with the other dried fruits in our local supermarket.
If you have trouble finding them you can order online through vitacost.com or iherb.com

Just wanted to pop in and tell you how much I love this recipe. I made carrot cake balls like this except a little more tedious and my 3 year old loved them. These are pink and beautiful and she loves them too. I actually enjoyed them and I wasn’t a fan of the carrot cake bites. I put them in the freezer so that we have home made snack on hand 🙂

I made these to take to work for a 12+ hour database upgrade. They were a hit! It’s amazing how much flavor a teaspoon of vanilla extract packs. My yield was far fewer than 40 though. I had less than 20, so I had to run back out and get more ingredients.
Curiously, I could *not* find freeze-dried strawberries at either giant supermarket near me. I know I’ve seen them there in the past. I ended up buying a few boxes of Special K with Red Berries and picking the strawberries out.

Hi, I made these today, however, they came out very dry and I was unable to roll them into balls. Any suggestions? My mix looked like the pictures.

It could be that your dates were a little dry, maybe try adding a splash of water just a teaspoon at a time to add a ittle extra moisture to the dough. Repeat until the mix comes together to form that sticky dough.
Next time you could try soaking your dates in some warm water for 10 mins before you begin, then drain and rinse and make as normal. That should help too.

Hi Leannae,
The recipe calls for freeze dried strawberries and to be honest I’m not sure fresh would work. The texture and consistency would be very different.
Regular dried strawberries would work just fine I’m sure but as for fresh I couldn’t say. Can’t hurt to give it a try though, let me know how it goes 🙂
